What to look for in a pour over kettle
- Gooseneck spout. This is the single biggest factor — the narrow, curved spout gives you precise control over pour speed and location. Without it, you're essentially dumping water, which leads to uneven extraction.
- Variable temperature. Pour over lives in a narrow window, roughly 195–205°F (90–96°C). On/off-only kettles force you to guess or wait. A display with 1°F adjustments is ideal.
- Build: stainless steel > glass. Stainless holds heat more stably during your pour. Glass is prettier but thermally less forgiving.
- Weight and balance. You'll pour for 2–3 minutes per brew. A kettle that's heavy and top-balanced makes consistent pouring a workout.
- Hold temperature function. Lets the kettle maintain your target while you bloom and pour. Cheap kettles skip this.

What's the ideal water temperature?
Short answer: 200°F (93°C) works for most beans. Lighter roasts tolerate (and benefit from) 205°F (96°C); darker roasts taste better closer to 195°F (90°C).
