What to look for in a drip coffee maker
- SCA-certified brew temperature. The Specialty Coffee Association certification requires the machine to brew between 197.6–204.8°F (92–96°C). Below that, you get under-extraction (sour, thin); above it, bitterness. Most cheap machines never reach this range.
- Capacity that matches your household. Brewing a half-carafe on a 12-cup machine usually extracts poorly — the water flow over the small bed is too fast. Size the machine to how much coffee you actually make.
- Shower head (water dispersion). A proper shower head saturates the entire grounds bed. Spot-drip machines (water poured onto one spot) cause channeling.

- Thermal carafe vs hot plate. Hot plates slowly cook the brewed coffee into bitterness. Thermal carafes (insulated steel) keep coffee hot without further cooking.

Choosing the right grind and ratio
A drip maker depends on the coffee you feed it. Two variables matter most:
